Food and Beverage is one of the most complex activities in tourism and hospitality yet it is not as well researched as one would expect given the sector scope and relevance.  We welcome papers and/or case studies of best practise that elucidate issues and recent trends in food and beverage. The scope of the theme is intended to be holistic enough in order to attract submissions that explore management, design, technology and marketing in food and beverage. 

This theme invites submissions that explore trends and/or best practise cases in:

  • Food and beverage technology
  • Menu design and menu development
  • Beverage marketing
  • Food design and innovation
  • Food and beverage sustainability
  • Crisis and Food and beverage
  • Digital marketing and Food and beverage
  • Food and beverage taxation
